You can easily sprout soy beans in a jar, where they take 2-4 days to grow into crisp, fresh sprouts that you can enjoy in a variety of dishes. The full-grown sprouts, with their creamy white tails, are perfect for stir-fries and Asian-inspired dishes like miso soup.
Benefits of Soy Bean Sprouts
Sprouting soy beans is a convenient way to enjoy fresh greens throughout the year. Soy beans are a low-calorie, nutrient-rich food that provides a good balance of protein and fiber. Sprouted beans offer a more satisfying texture compared to smaller sprouts like alfalfa or broccoli, making your meals feel heartier. As a low-GI food, soy beans help you feel full longer, keeping your energy levels steady.
Soy beans store well for long periods if kept in a cool, dry place, making them a great pantry staple. Easy to prepare and grow, they offer both nutritional and culinary versatility, making them an economical choice for any diet.
How to Sprout Soy Beans
Soy beans can be sprouted using a sprouting jar, a colander, or a hemp sprouting bag. Follow these simple steps to sprout in a jar:
-
Pre-soak seeds:
Soak the soy bean seeds for 8-12 hours.
-
Method:
Rinse 4 – 6 tbsp of pre-soaked seeds with cool water for a few minutes. Add the seeds to your jar and fill the jar 3/4 with cool water. Tilt the jar upside down and use the sprouting lid to drain the water. Leave the jar in an upside-down position for 8-12 hours to allow water drainage while maintaining moisture. Ensure that the seeds do not sit in water.
-
Rinse and Repeat:
Rinse and refill the jar with fresh water every 8-12 hours. Tilt the jar to drain excess water and repeat this process until your sprouts are ready.
-
Yield:
After 3 – 4 days, you’ll have approximately 1 – 1 1/2 cups of fresh, living soy bean sprouts.
